I was so excited to take Grady to the blueberry patch once the season opened. I’ve never been picking blueberries myself so it was fun to share this memory! Grady and I shoot for one adventure a week so a trip to the patch was right up our alley. Fresh air, conversation, exercise, endless amounts of blueberries to eat…it was the perfect activity for a rowdy 2 year old.
The bushes were so full of berries. It didn’t take long to fill our bucket. I kept an eye on when the season opened and went that week. We went again three weeks later and everything had been picked over so I’m glad we went when we did. The weather was perfect – even for mid June. 75 degrees and breezy.
Now let’s get to the baking! Even with the huge bucket we picked, I ran out of blueberries before I could make everything I wanted. This blueberry cobbler was super quick and easy. Didn’t take any time at all to make. It was very sweet (you tossed the blueberries in sugar before putting the crust on top). I’m sure adding a scoop of vanilla ice cream would help cut the sweetness.
This blueberry crumble was a huge hit at a neighborhood gathering. I live in one of those neighborhoods where everyone hangs out on their front porches and when you see someone out, you just walk over. I had just pulled this out of the oven and walked over with the pan. Half of it was gone in minutes. It took a little longer to make because you had a lower crust, a middle and a top crust…but it was soooooo worth it in the end.
Grady got in the kitchen and helped me make these blueberry muffins. He loves them and I use bananas in leu of sugar (because my kid doesn’t need ANY sugar). These aren’t that hard to make. Mashing the bananas are annoying, BUT I will say that these freeze really well so I’ll let him eat a few and put the rest in the freezer for a later breakfast.
This lemon blueberry cake was the one thing I didn’t get to make because I ran out of blueberries. We went back out to the patch again and gathered another bucket so I’ll be able to try this one soon. It does look like it would take a little longer so this might be something I do while the boy is napping.
