Frozen Rainbow Bark

Rainbow bark is so much fun and it’s so easy. It’s cold, it’s sweet, and it’s colorful. The original idea was from Pinterest but the bark part was white chocolate. I’m one of those moms that tries to put a rein on the sugar intake. I DO allow candy from time to time but I like to keep it at a minimum. In order to have the best of both worlds, I thought, why not just use yogurt and freeze it? I gave it a try and it worked! My boys love it and it’s perfect on a warm day. To make rainbow bark, you need yogurt (I use vanilla), rainbow sprinkles and airhead bites.

First, line a baking sheet with parchment paper. The parchment paper will peel right off the yogurt once it’s frozen. Dump out your yogurt and use a spatula to smooth it out. Make sure you can’t see the parchment paper through the yogurt – that means you’ve spread it too thin.

After you’ve spread your yogurt, sprinkle it and add your airhead bites. Use as much or as little as you want. The airhead bites do get hard after freezing so watch that bite! My oldest son likes to suck on them until they get soft. Great way to get those cavities going.

Pop the entire pan in the freezer until hard.

Use a knife and cut your bark into pieces. Isn’t it pretty??? I love the way it looks.
